It'll be interesting to see if this gets off the ground. Bob Payton knew what he was doing when he set up CPPF and the restaurants were places of theatre that served pretty good food with genuine American flair. Going into a CPPF was like going through a star gate into a different world. You'd just stepped into a basement off Broadway but up there on the street was still dreary London.

Recreating that success now is going to be a far greater challenge than it was back then. And that is not to denigrate in any way what Payton achieved at all - in many ways his restaurants really raised expectations and set benchmarks for customer satisfaction that others had to meet or not get custom. It began to wear thin around the time of opening Payton Plaice, his gargantuan fish restaurant.
